Something Sweet and Easy


This is something so fun for the kiddos to make. I did this with Emma a couple of weekends ago and it only takes 5 minutes. Easy easy. There are a couple of variations where you use a cake mix and make up a big batch and put it in small gift baggies. You then put them in a mug with instructions on how to make (by adding an egg, milk and oil) and give them away as small gifts to neighbors, teachers, friends and such. I will also add that variation at the bottom.

You will need a large mug with no metal trim or decorations. This cake is one serving and it is made it in the microwave.

Spray the inside of the mug with cooking spray.

You will need  the following:
4 Tablespoons flour
4 Tablespoons sugar
2 Tablespoons cocoa
1 Egg
3 Tablespoons milk
3 Tablespoons oil

Whisk together flour, sugar and unsweetened cocoa. Then add the remainder of the ingredients. I did this in a separate bowl because the first time it did not blend well in the bottom of the cup. 

Prepare your mug by spraying the inside well with spray vegetable oil.

Pour the batter in the mug. Now you may lick the bowl, the spatula and your fingers. But only when mom is not looking.

See....it doesn't look like much does it? but watch.

Put it in the microwave for three minutes and watch it puff up and up.

Ahhhh! but it settles back down after you take it out. 

Tip the cup over being careful not to burn yourself. The steam from the cake is hot. Then you can have your whole cake and eat it too. Talk mom into making a little glaze for it. Yum.

Another variation:

Cake in a Mug Gift: Get a large mug with no metal trim (because the cake is microwaved). This cake is kind of a brownie consistency. It is one serving and made in a microwave.

Cake in a Mug (makes 8)

18 ¼ oz. Chocolate Cake Mix (box, any brand)
3.9 oz. pkg. Instant chocolate pudding mix
3 c. powdered sugar, divided
4 ½ T. hot cocoa mix, divided

Place dry cake mix and pudding mix in a large mixing bowl; mix together. Divide and place a ½ cup mix in 8 plastic Ziploc sandwich bags; label as cake mix. Tuck one bag in a large mug that will hold at least 1 ½ cups of water. Place 1/3 cup powdered sugar, 1 ½ teaspoons hot cocoa mix and ¼ teaspoon vanilla powder in 8 plastic Ziploc snack bags; label as glaze mix. This makes 8 individual mixes for coffee mugs.

Tie a gift tag with instructions onto the handle with raffia or a ribbon

Spray inside of coffee mug with nonstick vegetable spray. Empty contents of cake mix bag into mug and add one egg, 1 Tablespoon oil and 1 Tablespoon water. Mix until well blended. Microwave on high for two minutes. While cake is baking place glaze mix in small mixing bowl and add 1 ½ teaspoons water, mix well. When cake is done, pour glaze over cake in cup and eat while warm or not.

What fun! The kids will love to do this! I think I'll wait a day or two after the dissection of the lungs and heart that we're doing today - not too appetizing! Yes, Vonda, I've already been warned by Pat to be careful with the air compressor and those lungs - Trust in Me!!! But just in case - we'll do that part outside!
